~ Local Sugar Bush Maple Cake ~

1/2 cup butter*, room temperature
1/2 cup golden brown sugar
   Cream together
1/3 cup applesauce*
1/2 cup maple syrup*
1 teaspoon vanilla
   Add and beat until well incorporated
2 eggs*
  Add one at a time beating well after each

Sift together:
2 cups whole wheat pastry flour*
1/2 teaspoon cinnamon
1/4 teaspoon salt
2 teaspoons baking powder
1/4 teaspoon baking soda

1/4 cup milk*
   Beat sifted mixture alternately with the milk into the batter.  Do about 3 additions of each.

Pour into prepared 8" square pan (buttered and floured).
Bake at 375 degrees about 30 minutes until toothpick comes out clean.
Cool 10 minutes.
Drizzle & spread 1/4 cup maple syrup* over cake.  It sinks in fast so spread as you drizzle.
Serve topped with a mixture of Double Maple Yogurt* & Icelandic Plain Yogurt* sweetened to taste with maple syrup.
Top with a sprinkling of maple* candied pumpkin seeds.
